Simple Stuffed Peppers
A really easy thing to make, that only takes a little bit of prep time.
Can be personalised to own tastes.
Also can be used to make Stuffed Tomatoes
You Need...
1 x Large Pepper
Breadcrumbs
Whatever you want to stuff it with, I recommend:
- Tomato (or pepper if a stuffed tomato)
- Celery
- Onion / Leek
- Sweetcorn
- Courgette
You can of course, fill it with whatever. Mince would add some more flavour, or bacon / sausage (precooked). It is a good way to use up odd left overs.
Get your pepper, and cut the top off carefully, try to cut as close tot he top as possible. Then remove the seeds and bits, from the inside of the pepper.
[tip] If you then fill it with cold water and swill it around, it removes those hard to get out seeds that stick..
Next up, get your fillings. If you can buy pre-made breadcrumbs, then that is cool, if not, make some well cooked (not burnt) toast, and break it all up into crumbs.
Dice everything finely. Add into a bowl or some container type thing, and mix everything together. Add some garlic granules, or a bit of garlic for flavour, along with some salt and pepper. If you fancy something with more of a kick, chuck in a bit of chilli powder too, or some ginger.
Now stuff your pepper. It is called a stuffed pepper, not filled, so really get lots in. Put the top back on, and stick it in the oven to cook.
[tip] If you have a yorkshire pudding tin, then the peppers will stand up in them.
Cook, on a low heat of around 140 degrees C. For 45 minutes. Or until the pepper begins to brown on the outside.
Serve with anything you want, from salad, couscous, rice or pasta!
